Aubergine Passata

Last week aubergines were on offer at Aldi for 39 pence so I bought two as I like aubergine very much indeed! I also had a tomato dream recently and I was serving a tomato drink - it came to light that tomato is excellent for prostate and women have a prostate in the same way that men do!




My Aubergine Passata dish included garlic - potato - oregano - passata and two types of cheese

Ingredients 

Two large cloves of garlic for boosting immunity 
1 large aubergine 
1 thinly sliced potato
Two thirds of a carton of passata for the prostate 
Half of a large red onion for boosting immunity 
Dried or fresh Oregano 
Olive Oil 
Pink Salt and freshly ground Black Pepper

Saute the sliced garlic and thinly sliced red onion together in the olive oil
Add the thinly sliced potato 
When softened put into a dish and cover in passata and dried oregano
Put in the oven to simmer  

Then saute your aubergine in the pan with the olive oil - plenty of it 
When cooked put your tomato ingredients from the oven in a bowl 
and layer it with the cooked aubergine with the tomato ingredients
In your oven dish
Add your salt and black pepper 
Return to the oven for further cooking

Then add slices of camebert and mozarella cheese to melt on top 
You can also add some roasted oats and seeds if you like it 

Its a delicious dish either hot or cold and can be served with a green salad
